Whipped up a big pot of roasted eggplant chili and cheddar-pepper corn muffins. Actually, M did half the work. I find cooking big pots of things so satisfying, even more than actually eating the food. You'd like this dish. I used a tasty heirloom bean called Eye of the Goat--fat and creamy. I know you like beans.—SF

  1. Yes it does sound good. Cheddar-pepper corn muffins. Hmmmmm . . . Never heard of those but they sound good too! I might have to give those a try. But as far as the chili, I don't think I will ever find, Eye of the Goat beans. :) And yes, I love beans and I prefer the eating to the making. By the way, they aired the amature Chopped episode, so I guess I didn't make the cut.

  2. I saw the episode! Those contestants had some human-interest story attached to them, which is probably most of the reason why they made the cut. If you felt comfortable spinning your hardships, I bet you'd have a decent chance. I have a feeling they'll continue with the concept so they can get enough contenders for an Amateur Chopped Champion competition.
